Henle festive cookies


For the dough
9oz / 250g flour
5oz / 150g butter
5oz / 150g sugar
2 egg yolks
a little vanilla sugar or finely grated lemon zest
1 tbsp rum (optional)

To decorate
1 egg yolk
Sugar pearls or icing sugar



1. Put the ingredients for the dough on a clean working surface. Mix together with your hands until a soft dough is formed.

Leave in a cool place for about an hour.


2. Put the dough on a lightly floured surface and roll it out to about 1/8 inch (3 mm) thick. Cut out shapes.


3. Place the shapes on a baking sheet lined with baking paper. If you like, brush with beaten egg yolk and decorate with sugar pearls.


4. Bake in a pre-heated moderate oven (375°F, 190°C) for around 8–10 minutes until golden brown.

Leave to cool.


Makes around 70–80 cookies. If kept in a tin in a cool place, the cookies should keep for at least a fortnight.
